Eves Pudding

Eves Pudding is a traditional British pudding made with apples and a Victoria sponge cake mixture. The apples are allowed to stew at the bottom of the baking dish whilst the cake mixture cooks on top.
Ingredients
  • 2 Bramley apples
  • 1 lemon, finely grated zest of
  • 75g demerara sugar
  • 75g butter or margarine
  • 75g caster sugar
  • 1 egg, beaten
  • 150g self-raising flour, sifted
  • splash milk
